The coffee industry in Flores was not known for quality prior to 2005. However, a program begun by the Indonesia Coffee and Cocoa Research Institute changed its entire coffee methodology to a quality forward approach. Today, there are 12 neighboring cooperatives in Flores and each of them has been certified as organic.
Brew tips:
Acidity is very low and very strong body, it makes for a nice blend component or wild chocolate-toned single origin espresso. And can also present a great bittersweet and pine resin flavor with smooth body by French press brewing. (coarsest ground)
