Sumatra coffees are known for their processing method. They do wet-hulled process that is after the coffee has been picked, it is pulped through a hand-cranked drum that removes almost all of the fruit and mucilage from the bean. After fermentation, the rest of the pulp is washed from the beans.
Brew tips:
Good quality bitterness will be accented by siphon brew or espresso.
1:15 beans/water ratio. 192~199°F water. Less water if for iced coffee. Adjust as personal preferences.
